I removed the door to show the workshop participants the inner chamber just as I had done for years. I saw it then. My stomach did queasy loops. My palms began to sweat. I had been waiting for this day since I first dusted off the 20 year old oven. Deep in the back, between a gentle curve in the bricks, a bit of spalling mortar dangled down like a loose tooth. If there's anything I believe in it's timing and friends: it is time for a new oven.
So welcome to our fundraising page for our custom built, mobile, wood fired oven! We have contracted John Henry Nelson to build our oven after he came by the bakery to talk about restoring the old Alan Scott. John does much more than just build ovens and after sharing some coffee and taking a few measurements it was also clear we both shared the same idea of what a good life should be composed of. An oven is just one element that ties together so many mundane and scared aspects of daily life. You can see more of John's earthen work, water harvesting systems and stoneworks at Stone & Spade.
The oven specs:
•4'x5' interior hearth
•barrel vaulted arch 16" height w/3"refractory
•super insulated ceramic blanket
•clad in 18 gauge steel with a rust finish
Our mobile oven will allow us to continue working at the bakery, ushering in the trusted Alan Scott into retirement years. It also means we can have two wood fired ovens going when necessary so one oven can be at the correct temperature for pizza while the other rests nicely at a temperature for croissants. And of course it means that we can bring our show on the road! Our book: A Baker's Year comes out on February 14th and we'd like to plan "away game" events with the book and the oven in the fall!
The estimate we're working with comes in at 22k. John is working with us to break up the deposit (thank you John!) and we've tossed all our bakery savings into the pot and we need your help to finish it!

HERE'S TO THE FUTURE!
Thank you to everyone who has donated or purchased a t-shirt/tote bag! We stared fundraising on Sunday evening via our newsletter and four days later we've raised $8,014.00 towards our 11k goal. WOW. We have some fun patches and pencils on the way so stay tuned for more merch. John has texted us a few pictures of the parts rolling into the shop and I've posted them below. Happy Imbolc!
