Queen Cake & Grit Bread Workshop

Join us Saturday, February 9th and Sunday February 10th for a weekend devoted to pastry and naturally leavened bread led by Christina Balzebre, owner and baker behind Levee Baking and Tara Jensen, teacher and baker behind Smoke Signals. Melissa Martin, of Mosquito Supper Club will be hosting our workshop and crafting delicious snacks to keep us going.

This workshop is a fun, hands on, deep dive into baking! Each participant will make a loaf of naturally leavened grit bread and a Queen cake, from scratch in the beautiful Mosquito Supper Club kitchen. Instruction will be provided each step of the way in a conversational, yet professional style. Participants will walk away with a better understanding of pastry and flour fermentation basics along with technical skills to put into practice at home. No previous baking experience necessary.

·      How to make a rough puff pastry

·      How to make frangipane

·      How to assemble and bake a Queen cake

·      How to mix, shape and bake a loaf of grit bread

·      How to work with fresh flour

·      How to tend to a sourdough starter

Christina Balzebre, a Miami native, moved to New Orleans in 2005 to pursue sociology at Loyola University.  Being in such a food and hospitality oriented city, she fell in love with the cafe culture and found a true passion in the process of baking. She deeply invested herself in learning as much as possible, working in various places throughout the city, while experimenting obsessively at home with traditional bread making methods and regional pastry. Bridging sociology and food, she has been able to see and experience the local food system and work within it as much as possible. 

 Tara Jensen runs the mobile, wood fired baking school, Smoke Signals. Jensen has been teaching sourdough bread, pastries and pies for over four years. Her book, A Baker’s Year, was hailed by Bon Appetite as “stand out publication” on life and baking. Known on Instagram as @bakerhands, Jensen posts daily to over 100k baking enthusiasts. She recently moved to Southwestern Virginia and is renovating a house with her husband and two dogs.
